The over-ripe plantain is a surprisingly funny food. Sliced, fried, and added to the side of a main dish, Plátanos Maduros are like the uninvited dinner guest who tells the greatest stories at the table. Sweeter than its cousin the banana, these sugar-laden pulps of mushy goodness taste like they belong at the end of the meal as dessert. Yet, they remain smiling and defiant on the main course plate. What can be funnier than that?
